Giulia Enders
German physician and microbiome researcher, best known for Gut: The Inside Story of Our Body’s Most Underrated Organ (originally Darm mit Charme, 2014) — an international bestseller that made popular science of digestion and the gut microbiome — and the later Organ Speak. Trained in medicine after an earlier intent to study energy engineering, she came to the subject through a teenage skin condition that sent her reading into how the body works and, eventually, to the gut.
Core positions
Enders’s public message is reassurance against health anxiety: the gut is a robust, self-healing organ (its lining largely replenishes in about two weeks), and most people underestimate what their bodies can handle. Many perceived food intolerances, she argues, are downstream symptoms of an underlying gut problem rather than fixed sensitivities — fix the underlying issue and the foods usually become tolerable again.
She favours simple, high-leverage habits over fashionable interventions: fibre and plant variety (endorsing Tim Spector’s ~30-plants-a-week rule of thumb), preparing starches to raise resistant starch (cook then cool), an 80/20 real-to-processed balance, and reading ingredient lists. On supplements and gut cleanses she is permissive but sceptical — willing to credit an individual’s reported benefit while noting that population data rarely supports the trend, and that the durable 80% of health is ‘the things your mama told you’: sleep, food, stress and movement. A distinctive framing is ‘stress hygiene’ — treating chronic stress, which starves the gut of blood flow and thins its protective mucus, as a hygiene problem more consequential than over-sanitising one’s hands.
